1991 was the first vintage for the Réserve de l’Obédience. The idea was simple: to produce the ultimate Chablis Grand Cru « Les Blanchots » without any compromise. Everything is implemented to grow the best grape, pruning, bud removal, productivity control, meticulous winemaking, very light filtration and screwcap closure to guarantee an absolute respect for the quality required in the vineyard. The blending of the best Chablis Grand Cru wine is carried out each year in June, all the wine coming from barrel and tank from the last harvest are sampled, selected to create the ideal wine: refined, distinguished, complete, powerful but mineral, complex and able to age for 20 years and more. Depending on the year, the proportion of wine matured in barrel varies from 50 to 70%.
This is a typically structured Grand cru. A colour vibrant colour golden green. Sumptuous, refined, intense and complex to the nose. In the mouth a marvellously fruity concentration with notes of apple blossom and hints of honey. The finish lingering and persistant. At its best after being decantered, allowing the bouquet to fully develop. To be served chilled at a temperature between 11 and 13°C.
Its delicacy and elegance makes this the king of the Grand Crus. The delicate bouquet is fine which evoque the perfume of white flowers and freshly cut grass and hints of vanilla. This wine is intense, fresh and full of powerful flavours. Splendidly harmonious and persistant in the mouth. Serve after being decantered and chilled at around 11 to 13°C.
This is a great wine, well-built and complex. The flavour is of the uppermost quality, its perfume of summer meadows, each sip, powerful and fruity with aromas of butter. Supported by an impressive structure, this wine can mature up to 15 years.
Refined in the glass. A nose ample and smooth with notes of wild mushrooms. Deliciously fruity. A flavour well rounded and balanced. Serve Chilled between 12°C and 13°C
A classical wine with aromas of flint stone and a subtle trace of butter. Crisp and abrupt in the mouth with a delicate, complexity and a substantial definite finish reminding us of the stony vineyards. Serve chilled at about 11 - 13 °C. Vaudevey is distinguished and refined when it is young, but develops an elegance, sharp and mineral with age.
Domaine Laroche is proud to honor the patron Saint Martin of Chablis. From 877 to 887, the remains of Saint Martin rested in the crypt of l’Obédiencerie (head office of Domain Laroche), which is situated a stones throw from the church of Chablis. Chablis St Martin has a beautiful, transparent colour of golden green. To the nose, subtle and creamy. To the palette, a suggestion of butter with classical mineral notes and hints of hazelnut and gunpowder. Long and intense in the mouth and a supple finish.
